At Élevage, in Aversa, I discovered a place where patience becomes care, and every fermentation, every preserve, is an attempt to capture a season and give it back in a new form.
From Octavin, I bring my way of listening to ingredients, transforming them, honoring their story. Here at Élevage, this approach takes on a new life, shaped by different hands, across new lands, without losing its original essence.
